Last week, there was a mass poisoning in Bishkek, resulting in 24 people being affected, all of whom consumed shawarma from the fast food outlet "Daamduu." This establishment was fined and closed after the incident.
- Fast food consists of many components - meat, vegetables, greens, and sauces, which increases the risk of contamination if sanitary norms are not followed.
- The greatest danger comes from sauces and fresh greens, which rarely undergo thermal processing.
- proper storage of products;
- adequate thermal processing of meat and semi-finished products;
- avoiding cross-contamination, where bacteria can be transmitted through unclean hands, clothing, knives, and cutting boards.
Moreover, food should not be prepared in an open manner. The food preparation area should be protected by glass or transparent plastic, and the transfer of finished dishes should occur through a special window.
It is necessary that customers and waiters do not have free access to the food preparation area. Personal hygiene of employees and their knowledge of the basics of cooking technology are also extremely important.
To prevent food poisoning, doctors advise customers:
- to pay attention to the overall sanitary condition of the establishment;
- to be cautious of suspiciously low prices and excessively large portions;
- not to buy food in places where cleanliness and order are not maintained.
